Lemon Pancakes

   

From The Joy of Cooking

Whisk together in a large bowl:
1 cup all-purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Whisk together in another bowl:
3/4 cup sour cream
1/3 cup milk
1/4 cup fresh lemon juice
3 tablespoons unsalted butter, melted
1 large egg
1 1/2 teaspoons vanilla

Pour the wet ingredients over the dry and whisk together, mixing just until combined.

Fold in: grated zest of 2 lemons


When cooking, be very careful of burning. Scoop the thick batter out in 1/4 cup amount, and gently spread the batter out in the pan with the back of a spoon.
