Cheese Quiche Bites

[I made these and they were really yummy. Made in a pie plate and cut
into larger pieces, it would make a nice entreé]
Prep Time: 10 mins.
Ready In: 30 mins.
Serves: Makes 36 quiche bites [or however many you cut it into ... duh]
5 eggs, lightly beaten
1/3 cup (75 mL) grated parmesan cheese
1 1/2 cups (375 mL) shredded cheese, with 1/4 cup of it set aside
[I used mozzarella, but the original recipe suggested a blend of cheeses]
1 pkg (10 oz/284 g) fresh spinach, cooked, well drained & chopped
1/2 tsp (2 mL) each dried basil leaves, salt & pepper
2 small tomatoes, thinly sliced [one will do]
[secret ingredient - 1/2 tsp dijon]
STIR together all ingredients except tomatoes & 1/4 cup (50 mL) shredded
cheese; pour into a lightly greased 9 in (23 cm) square pan. Top with
BAKE at 350°F (180°C) for 15-20 minutes. Sprinkle with reserved cheese;
cover & let stand 15 minutes. Cut into 1 1/2 in (4 cm) squares.
