Energy Cookies

   

1 tsp ground cinnamon

1/4 cup unsalted butter, softened

1/3 cup granulated sugar

1/3 cup firmly packed brown sugar
--------------------------------------------------------------------------------
1 large egg plus 1 large egg white
--------------------------------------------------------------------------------
1/2 cup unsweetened applesauce

1/2 cup frozen orange juice
concentrate, thawed

2 cups quick-cooking rolled oats

1 cup seedless raisins

Preheat oven to 350F. Coat four baking sheets with nonstick spray and set
aside. Combine flours, baking powder, soda and cinnamon in large bowl, set
aside. Using electric mixer at low speed, cream butter and sugars in large
bowl for 1 minute. Beat in egg and egg white, mixing only enough to
combine. With mixer at low speed, slowly beat in applesauce and orange
juice concentrate, scraping down sides of bowl as needed. Add combined dry
ingredients and beat 1 minute. Add rolled oats and beat 30 seconds more.
Using a spoon, fold in raisins. Drop dough by rounded tablespoon on to
prepared baking sheets, spacing 2 inches apart (you should get 12 cookies
per sheet). Bake until golden brown on bottom and firm on top, about 8 to
10 minutes. Transfer cookies at once to wire racks and cool to room
temperature. Store in airtight container.

Makes 4 dozen, each with 64 calories, 1 gram fat and 7 milligrams
cholesterol.
