1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 cup granulated sugar
1 cup vegetable oil
2 cups grated raw carrot
1 1/2 cups grated apple
1 cup golden raisins
3 1/2 cup chopped walnuts (optional)
Cream Cheese Icing:
4 oz (125 g) cream cheese, softened
1/4 cup butter
3 1/2 tsp vanilla
1 to 1 1/2 cups icing sugar
Grease and flour 9- by 13-inch baking pan.
Preheat oven to 350F.
In medium bowl, mix flours, baking soda, salt and cinnamon.
In large bowl, beat sugar, oil and eggs with wooden spoon until slightly
Stir dry mixture into sugar mixture. Add carrots, apple, raisins, nuts if
using; blend. Turn into pan. Bake in preheated oven 35 to 45 minutes or
until toothpick inserted in centre comes out clean. Cool on wire rack.
For icing, beat cream cheese and butter with wooden spoon in small bowl
until fluffy. Beat in vanilla and enough icing sugar until spreading
consistency. Frost cooled cake with icing.
